Loaf Cake (Margam, Glamorgan)

Ingredients

a large piece of freshly risen dough
lard or butter
brown sugar
currants
raisins
a little spice
one egg, well beaten

Method

Having kept a large piece of freshly risen dough, work in the butter or lard and then the other dry ingredients.
Add the beaten egg, knead and leave to rise in a warm place.
Put in a warm, greased tin and bake in a moderately hot oven, as for bread.

A simple method of making loaf cake, commonly practised in farmhouses at harvest time.
Margam, Glamorgan.
