Anglesey Batter Cake
Description
Ingredients
half a pound plain flour
two ounces sugar
two ounces currants
a pinch of salt
a pinch of bicarbonate of soda
quarter pound butter
two eggs
a little sour buttermilk
Method
Dissolve the bicarbonate of soda in a teaspoonful of sour buttermilk.
Melt the butter over a pan of hot water.
Beat the eggs and pour slowly on to the melted butter and then add the sour buttermilk mixture.
Gradually pour this liquid mixture into the dry ingredients in a bowl and beat thoroughly to make a fairly stiff batter.
Drop the batter from a tablespoon on to a greased bakestone or iron pan, and bake as for pancakes.
Then split in half and spread with butter.
Serve warm.
