Description
Ingredients
- half a pound plain flour
- four ounces butter or lard
- three or four ounces mixed dried fruit
- one teaspoonful cinnamon
- one teaspoonful ginger
- half a teaspoonful bicarbonate of soda
- one tablespoonful vinegar
- milk
Method
- Rub the fat into the flour and work in the other dry ingredients.
- Mix gradually with milk to give a fairly soft consistency.
- Dissolve the soda in the vinegar, pour it over the soft batter mixture and stir briskly.
- Allow this mixture to stand overnight.
- Line a cake tine with greaseproof paper, pour the mixture into it and bake in a moderately hot oven for about one and a quarter hours.
