Description

Ingredients



  • half a pound plain flour

  • four ounces butter or lard

  • three or four ounces mixed dried fruit

  • one teaspoonful cinnamon

  • one teaspoonful ginger

  • half a teaspoonful bicarbonate of soda

  • one tablespoonful vinegar

  • milk



Method



  • Rub the fat into the flour and work in the other dry ingredients.

  • Mix gradually with milk to give a fairly soft consistency.

  • Dissolve the soda in the vinegar, pour it over the soft batter mixture and stir briskly.

  • Allow this mixture to stand overnight.

  • Line a cake tine with greaseproof paper, pour the mixture into it and bake in a moderately hot oven for about one and a quarter hours.
