Anne Davies’s Cake

Description

Ingredients

  • one pound and a half plain flour
  • one pound and a half currants
  • one pound sugar
  • quarter pound butter
  • half a pound lard
  • half a teaspoonful nutmeg
  • half a teaspoonful mixed spice
  • half a teaspoonful baking powder
  • quarter teaspoonful salt
  • half a pint milk
  • two eggs, well beaten

Method

  • Rub the butter and lard into the flour and sugar and add all the other dry ingredients.
  • Make a well in the centre of this mixture, pour the eggs into it and gradually add the milk, mixing all together to give a fairly soft consistency.
  • Grease two cake tins, divide the mixture equally between them and bake in a moderately hot oven for about one and a half hours.

Ann Davies kept a shop in Kidwelly at the beginning of this century. She baked bread and cakes in a large oven behind the shop and her fruit cake (recipe as above) was in great demand, at sixpence per round.

Miss Davies died in the Spring of 1928.
