Description

Ingredients



  • four cupfuls plain flour

  • two large teaspoonfuls baking powder

  • two large teaspoonfuls ground ginger

  • half a cupful sultanas

  • half a cupful cherries (halved)

  • a little candied peel

  • four ounces butter

  • two eggs

  • three-quarter cupful honey

  • a little salt

  • a little milk



Method



  • Sift the flour, the baking powder, salt and ginger into a bowl and add the dried fruit, candied peel and cherries.

  • Melt the butter over a low heat and dissolve the honey into it with a little milk.

  • Leave to cool and then pour, together with the beaten eggs, into the dry mixture.

  • Mix thoroughly.

  • Put in a greased cake tin and bake in a moderately hot oven.

  • Store for a fortnight before cutting.
