Rice Cake

Ingredients

  • two cupfuls rice
  • a little salt
  • water
  • one pound plain flour
  • half a pound butter
  • one teaspoonful baking powder
  • four eggs
  • milk
  • sugar – according to taste
  • a little nutmeg

Method

  • Boil the rice in salted water until soft and fluffy.
  • Rub the fat into the flour and then work in the rice and the other dry ingredients.
  • Finally add the eggs and a little milk to give a lighter batter consistency.
  • Then pour the batter into a greased shallow tin and bake in a fairly hot oven.
  • Alternatively place in a low position under a hot grill.
  • Traditionally this cake was baked in a Dutch oven in front of an open fire.
