Description

13. Grading the finished Llandyrnog cheese at Brookhouse Mill in Denbighshire (now a restaurant). 2140 is Llandyrnog creamery's identifying number. By the time the cheese is eaten 10% of its original weight was lost by dehydration and the inedible rind. Note there was no refrigeration.
