Bola Mochyn – Tripe
Method
• After killing a pig, clean the tripe immediately under cold running water. Allow to stand in salt water and lime for nine days, changing the liquid daily.
• Then wash it thoroughly before putting it in a large saucepan. Cover with water and boil until tender.
• Lift it out on to a large dish and press.
• When set, cut into slices and fry in bacon fat with onions.
