Method

• Scrub the potatoes clean, and bake in a hot oven.
• Split open, sprinkle with salt and dot with butter.
• Serve while warm.

A simple method, practised in many districts, was to place the potatoes between the front bars of the grate and bake them in the glow of the bright, clean fire.
