Description

Ingredients


  • half a pound split peas

  • one egg, well beaten

  • a little butter and sugar

  • salt and pepper



Method

  • Wash the peas thoroughly and soak in cold water overnight.

  • Put the peas in a muslin bag, tie securely, but allow for expansion.

  • Put the bag in a saucepan, cover with boiling water, and add a little salt.

  • Boil briskly for about two hours or until the peas are soft.

  • Lift the bag out of the water and drain.

  • Take the peas out of the bag and work them through a fine sieve or colander into a large dish.

  • Add the butter, the egg, salt, pepper and sugar.

  • Beat well for a few minutes until thoroughly mixed.

  • Place the mixture on a floured cloth, roll up and tie both ends securely.

  • Boil the pudding for another half an hour.

  • Turn out on to a hot dish, slice and serve with salt beef or pork.
