Steamed Salmon or Sewin

Description

Ingredients

  • salmon steak (approximately one pound)
  • pepper and salt
  • butter
  • water
  • fennel (or vinegar)

Method

  • Using a double saucepan, put a few fennel leaves in the lower one and fill it with water.
  • Season the salmon steak with pepper and salt, put a large knob of butter on top and place in the second saucepan, over the lower one.
  • Boil the water and allow the salmon to cook in this steam for about fifteen minutes.
  • Alternatively, place the salmon steak on a greased enamel plate, rest it on top of a saucepan of boiling water and cover it with the saucepan lid.
  • Steam the fish in this way, allowing fifteen minutes per pound weight.

Steamed or poached salmon was highly commendable for a person suffering from a stomach ailment.
